Guest Chef Biography:
Nikiforos Vaimakis creates inventive, wholesome foods with love and artistry. As a native of Greece, the Mediterranean way of life and diet were his upbringing and passion. While his formal education is in the hospitality industry, his informal education from villagers up in the mountains, with their warmth, tradition, and cuisine has informed his food philosophies to deeper, more authentic levels. The farm-to-table movement spreading in the United States has provided a new cultural backdrop, sparking Nikiforos' unique fusion of farm-to-table and traditional Greek cuisine. He has worked in the hospitality industry for the past eighteen years. In the United States, he lives and works at Hopewell Valley Vineyards just outside of Princeton, NJ.
